White Chocolate Cranberry Almond Bark


Yum.E!  I was trying to think of some last minute neighbour gifts that were super easy and didn't take a lot of actual labour.  After all, with a little one running around and a full time job, things need to be quick and easy in general!  So, using three ingredients I had on hand and barely five minutes of my time, this is what I came up with.




White chocolate melts... I think I had about 2 1/2 - 3 cups or so.  I probably could have used at least another cup, but I made it work with what I did have.  Anyhow, melt them in the microwave according to package directions.  If you don't have the packaging, do about a minute to start, mix it up, and then do increments of 30 seconds until the chocolate is fully melted and smooth.  But in the meantime, while that is melting......


About 2 cups of plain almonds spread out onto a clean, non stick baking sheet.  Then, sprinkle approximately 1 cup of dried cranberries over the almonds.  Try to have the pan covered, but a single layer of almonds / cranberries.


Take your now melted white chocolate and poor it all over the almonds / cranberries.  You may need to use a spatula to spread it a bit.  Then, either leave it on the counter to set or pop it into the fridge until the chocolate has hardened again.

Oh my... could you imagine this with dark chocolate?  I love dark chocolate......


Now that it's hardened, flip it out onto a clean surface and break it up into pieces.  Big or small, whatever you prefer.


Like I said at the beginning of this post... Yum.E!  Super fast, super easy, little labour, great results.  Perfect!
